Chocolate Storage and Preservation Guide
How to store chocolate properly? Ideal temperature, humidity level and storage duration. Is storing chocolate in refrigerator correct?
You bought quality chocolate but if you don’t store it properly, its flavor and appearance can deteriorate quickly. Here are the ways to preserve chocolate in the best way.
Chocolate Enemies
Four basic factors that spoil chocolate:
1. Temperature
- Chocolate should be stored at 18-20°C
- Starts melting above 28°C
- Sudden temperature changes are harmful
2. Humidity
- Ideal humidity level: 50-55%
- High humidity causes sugar spots
- Low humidity leads to drying
3. Light
- Sunlight and artificial light are harmful
- Causes oxidation and color loss
- Dark environment should be preferred
4. Odor
- Chocolate absorbs odors
- Keep away from onions, spices
- Store in closed container
Chocolate Type and Storage Duration
Dark Chocolate
- Shelf life: 18-24 months
- Longest lasting type
- Stable because it contains no milk
Milk Chocolate
- Shelf life: 12-18 months
- More sensitive due to milk content
- Sensitive to temperature
White Chocolate
- Shelf life: 6-12 months
- Shortest shelf life
- Can spoil easily
Filled Chocolates (Praline, Truffle)
- Shelf life: 2-4 weeks
- Contains fresh ingredients
- Should be consumed quickly
Refrigerator Storage: Right or Wrong?
Short answer: Generally no.
Why?
- Refrigerator contains moisture
- High risk of odor absorption
- Condensation (sweating) occurs
- Risk of “sugar bloom” and “fat bloom”
Exception cases:
- If home is very hot (28°C+)
- Long-term storage needed
- Filled chocolates (short-term)
If storing in refrigerator:
- Store in airtight container
- Isolate from other foods
- Wait 30 min at room temperature before serving
White Spots on Chocolate
Do you see white spots on your chocolate?
Sugar Bloom
- Cause: Sugar comes to surface with moisture contact
- Appearance: White, sandy surface
- Solution: Prevent freezing, slow cooling
Fat Bloom
- Cause: Temperature change, wrong tempering
- Appearance: White, oily layer
- Solution: Storage at stable temperature
Is it edible? Yes, only appearance is affected. No problem in terms of taste and safety.
Proper Storage Steps
1. Keep in Original Packaging
- Packaging is designed for protection
