Characteristics of Turkish Coffee
Turkish coffee differs from other coffee types:
- Very finely ground coffee is used
- Coffee is boiled with water
- Not filtered, grounds remain at bottom
- Foam is an important quality indicator
Required Materials
Cezve Selection
- Copper cezve: Most traditional, best heat conduction
- Brass cezve: Durable, performance close to copper
- Steel cezve: Practical but less heat distribution
Cezve size should be chosen according to number of cups to brew. Small cezve is ideal for 2 people.

- Must be very finely ground (flour consistency)
- Freshly roasted preferred
- Arabica beans more aromatic
Water
- Cold and clean water

- 1 coffee cup water per cup

2. Mixing

- Mix well - coffee should dissolve completely
3. Cooking

- Watch when foam starts to form
4. Taking Foam
- When foam starts to rise, remove cezve from heat
- Distribute foam equally to cups with spoon
- Put cezve back on heat

- Don’t boil - foam escapes
