The Origin of Chocolate: Central America

The story of chocolate begins in Central America around 2000 BC. The Olmec civilization is recognized as the first community to cultivate and process the cacao tree (Theobroma cacao).

Theobroma cacao - means “food of the gods” in Latin. This name reflects the sacred place of cacao and chocolate in ancient cultures.

The Maya Civilization and Cacao

For the Mayans, cacao was not just a beverage:

  • Used as currency
  • Essential for religious ceremonies
  • Featured in wedding and funeral rituals
  • Only nobles and priests could consume it

The Mayans prepared a frothy beverage by mixing cacao with hot water, pepper, corn, and various spices. This drink was called “xocolatl” - the origin of the word chocolate comes from here.

The Aztecs and “The Drink of the Gods”

The Aztecs gave even greater importance to cacao than the Mayans:

  • Emperor Montezuma is said to have drunk 50 cups of cacao per day
  • Cacao beans were used as official currency
  • A turkey cost 100 cacao beans, a slave’s price was 4000 beans

The Aztecs created different flavors by adding vanilla, sweet potato, and achiote (red dye) to cacao.

Journey to Europe

When Spanish conquistador Hernan Cortes met Aztec emperor Montezuma in 1519, he encountered cacao. When Cortes brought cacao beans and recipes to Spain:

  • The Spanish softened the taste by adding sugar
  • They began serving the drink hot
  • Chocolate became the luxury drink of Spanish courts

For about 100 years, chocolate was Spain’s secret. In the 17th century, it spread to other European countries.

Industrial Revolution and Modern Chocolate

The 1800s saw revolutions in chocolate history:

  • 1828: Cocoa press invented in Holland - cocoa powder production began
  • 1847: First edible chocolate bar produced in England
  • 1875: Milk chocolate invented in Switzerland
  • 1879: “Conching” technique developed and smooth chocolate production began
